With the addition of fresh chives, it creates a deeply satisfying and surprisingly simple way to put your favorite potato chips to use. For a lighter texture, feel free to swap in Greek yogurt (or even mayonnaise) instead of cream cheese. Chopped dill or scallions can easily replace, or join, the chives for fresh variations.
