A wholesome fusion wrap made with homemade multigrain tortillas, grilled paneer, fresh vegetables, and creamy spinach pesto. A healthy, delicious meal that’s perfect for lunch, dinner, or lunch boxes.

Ingredients
For the Multigrain Tortillas
- ½ cup whole wheat flour
- ¼ cup jowar flour
- ¼ cup oats flour
- 1 tbsp flaxseed powder
- ½ tsp salt
- 1 tsp olive oil
- Warm water as required
For the Spinach Pesto
- 1,1/2 cups spinach leaves, blanched
- ¼ cup walnuts or almonds
- 2 garlic cloves
- 2 tbsp olive oil
- 2 tbsp grated Parmesan
- 1 tbsp lemon juice
- Salt and pepper to taste
For the Filling:
- 200 g paneer, cut into strips
- 1 tsp olive oil
- ½ tsp mixed herbs
- ½ tsp chilli flakes
- Salt and pepper to taste
- ½ cup mixed coloured capsicum, sliced
- ½ cup onion, sliced
- 1 cup thin slice purple cabbage
- Grated mozzarella (optional)
Method:
Prepare the Tortillas
- Mix all the flours, flaxseed powder, salt, and olive oil.
- Add warm water gradually and knead into a soft dough.
- Rest for 15 minutes.
- Divide into 4 balls, roll into thin circles, and cook on a hot tawa for 30–40 seconds on each side. Keep covered.
Prepare the Spinach Pesto:
- Blend spinach, walnuts, garlic, olive oil, lemon juice, cheese (if using), salt, and pepper until smooth.
Prepare the Filling:
- Toss paneer with olive oil, herbs, chilli flakes, salt, and pepper.
- Grill on a hot pan until lightly golden.
- Sauté the capsicum and onion for 2–3 minutes until just tender.
Assemble the Wrap:
- Spread spinach pesto over each tortilla.
- Arrange purple cabbage, grilled paneer, and sautéed vegetables.
- Sprinkle mozzarella if desired.
- Roll tightly and grill for 2–3 minutes until crisp.
- Slice in half and serve warm.
Tip: For extra nutrition, add grated carrots or lettuce to the filling and serve with yogurt-mint dip.
