ALBUQUERQUE, N.M. – A chef in New Mexico is reworking the hot dog with Swedish toppings like shrimp salad and mashed potatoes as she looks for a permanent home for her business.
Amelia Eudailey runs Hey Hey’s Swedish hot dogs, a take on the American classic that replaces ketchup and relish with toppings she said reflect Swedish street food.
“My mission is to put sweden on the map for food other than meatball,” said Amelia Eudailey.
Eudailey, a San Francisco transplant, has spent the past year popping up at events across New Mexico and introducing people to her version of a Swedish hot dog.
“So in Sweden when you are getting out from a night at the bars or your on the go for lunch you get this really like comfort food mashed potato, shrimp salad, hotdog, pickles, ketchup mustard all wrapped up,” said Eudailey. “That’s the inspiration behind my hotdog,”
Eudailey said the past year also brought connections as she explored the state and its food scene.
“I’ve been able to explore the state I just think it is so beautiful and I just love the people. And I think there is a really awesome food scene here and everyone is just really hungry for new creative fun food,” said Eudailey.
