A native of Bergamo, Italy, Chef Sascia boasts an impressive pedigree including decades of experience in Michelin-recognized kitchens, luxury resorts and acclaimed fine dining establishments across Italy, Hawaii, Florida and Texas. His journey is one of technical precision, culinary innovation and a deep passion for authentic Italian traditions.

What makes his landing in Hot Springs so special is the history between himself and the Mirs. Chef Sascia previously worked alongside Saddiq and Jeannie at the posh Gaylord in Dallas, Texas, and their shared vision and longstanding friendship have now come full circle, infusing J&S Italian Villa with renewed energy.
As Saddiq put it, the goal of the restaurant is to elevate Hot Springs’ culinary scene and give the community something truly great, and this reunion of colleagues promises to do just that. Chef Sascia emphasizes authentic touches such as seasonal menus with farm-to-table elements using local produce, homemade pasta, fresh seafood and steaks, all prepared with refined techniques and featuring thoughtful presentation and pairings.
Ryan and I experienced this magic firsthand, diving into the special Valentine’s Day menu (available through February 14) which was so impressive that favorites elements of it are joining the regular menu lineup. I can say without reservation, the meal was among the very best I’d ever had anywhere, including on my trips to Italy itself.
We started with the salmon tartare — fresh and vibrant with avocado, olive tapenade, candied lemon zest and chive oil crostini. The scallops and shrimp risotto was another highlight, comprised of pan-seared diver scallops and tiger shrimp atop creamy prosecco-lemon risotto finished with crispy leeks, sweet peppers, beurre blanc and luxurious salmon caviar.
For the main, the prime beef chateaubriand stole the show. A masterpiece of tender, perfectly cooked beef paired with black truffle whipped potatoes, brandy peppercorn demi-cream sauce and asparagus au gratin. Pro tip: add diver scallops or lobster tail for extra indulgence.
We wrapped up this unforgettable meal with shareable desserts including the rich, decadent gelato which married dark Belgium chocolate and Gran Gala with candied blood orange, and the dramatic tableside-flambéed baked Alaska.
From the warm welcome to the impeccable pacing and genuine attentiveness, the service at J&S Italian Villa was flawless throughout the night — welcoming, professional and truly family-oriented, just as Chef Sascia and the Mirs intend.
