Broke Gourmet: Good Things Come in Small Packages

By Roy Mosby | Broke Gourmet

They say good things come in small packages, but I’ve always believed it’s what’s on the inside that really matters. And this week’s recipe is a pretty good example of that.

We’re making Chicken Bacon Ranch Puff Pastry Pockets, and while they may look like something you’d find behind the glass at a fancy bakery, there’s nothing particularly fancy about making them.

It starts with store-bought puff pastry. I’m all for cooking from scratch, but sometimes it makes more sense to let someone else do the hard work. Besides, when you’ve got chicken, crispy bacon, melted cheese, and homemade ranch dressing waiting to go inside, I think we can forgive ourselves for taking one shortcut.

The filling is where things really get interesting. Tender chicken, chopped bacon, cheddar, mozzarella, and cream cheese come together with a simple homemade ranch dressing. Nothing complicated, just familiar ingredients that work well together.

Once everything is tucked inside the pastry and baked until golden brown, you’ve got a crispy, flaky exterior surrounding a rich, creamy filling.

But we’re not stopping there.

To finish things off, we’re adding a creamy roasted garlic Parmesan sauce. It’s the kind of finishing touch that makes an ordinary dinner feel a little more special. Drizzle a little over the top, and suddenly those humble pastry pockets look like something you’d pay considerably more for at a restaurant.

That’s one of my favorite things about cooking. You don’t need expensive ingredients or a kitchen full of fancy equipment to make something worth sitting down for. Sometimes all it takes is a few everyday ingredients, a little creativity, and the willingness to try something different.

These pockets are fun to make, just as much fun to eat, and substantial enough to serve as dinner. Add a simple salad or your favorite vegetable, and you’ve got yourself a complete meal.

So the next time someone tells you good things come in small packages, remember that they’re only telling you half the story.

Because sometimes, it’s what’s on the inside that makes all the difference.

Cheap Ingredients. Expensive Taste.

Chicken Bacon Ranch Puff Pastry Pockets

with Creamy Roasted Garlic Parmesan Sauce

Yield: approximately 8 pockets | Oven: 400°F

Homemade Ranch

½ cup mayonnaise

¼ cup sour cream

1–2 tbsp heavy cream or milk

Juice of ½ lemon

½ tsp dried parsley

½ tsp garlic powder

½ tsp onion powder

¼ tsp black pepper

No added salt or dill

Chicken Bacon Ranch Filling

2 lb chicken, cooked and chopped or shredded

8 slices bacon, cooked and chopped

1½ cups shredded cheddar cheese

½ cup shredded mozzarella

4 oz cream cheese, softened

⅓ cup homemade ranch, plus more if needed

Pastry

2 packages puff pastry (4 sheets total), thawed

1 egg, beaten, for egg wash

Creamy Roasted Garlic Parmesan Sauce

1 whole head garlic

A little oil for roasting the garlic

2 tbsp butter

1 tbsp all-purpose flour

¾ cup heavy cream

½ cup chicken broth (or ½ cup water mixed with ½ tsp Better Than Bouillon chicken base)

½ cup grated Parmesan cheese

Directions

Make the ranch. Whisk mayonnaise, sour cream, cream or milk, lemon juice, parsley, garlic powder, onion powder, and black pepper until combined. Refrigerate until needed.

Roast the garlic. Cut the top off the garlic head, drizzle with a little oil, wrap in foil, and roast at 400°F for about 35–45 minutes, until soft. Cool slightly and squeeze out the cloves.

Prepare the filling. Cook the chicken and bacon. Combine chicken, chopped bacon, cheddar, mozzarella, softened cream cheese, and ⅓ cup homemade ranch. Add a little more ranch if needed to bind the filling.

Fill the pastry. Unfold thawed puff pastry. Cut each sheet into four portions. Add filling to one side of each portion, fold over to make a pocket, seal the edges with a fork, and cut a small vent in the top.

Bake. Brush with beaten egg. Bake at 400°F for approximately 20–28 minutes, until puffed and deeply golden. Bake in batches if necessary.

Make the sauce. Melt butter in a saucepan and whisk in flour. Cook briefly, then slowly whisk in broth and heavy cream. Add the softened roasted garlic, mashing it into the sauce. Simmer for 3–5 minutes, then stir in Parmesan until smooth.

Serve. Plate the hot pockets and drizzle with creamy roasted garlic Parmesan sauce.
