The Official Gazette of Bosnia and Herzegovina, No. 42/26, published the decision of the Director of the Food Safety Agency of Bosnia and Herzegovina on the entry of the food product “Herzegovina Fritter” into the Register of Guaranteed Traditional Specialties.
With this decision, the food product “Herzegovina Fritter”, at the request of the Brotherhood of St. Nikola Tavelić Bun, has acquired the designation of a guaranteed traditional speciality.
As announced by the brotherhood, the awarding of the certificate will be held tomorrow, July 8, at the premises of the Food Safety Agency of Bosnia and Herzegovina in Mostar (Kneza Višeslava Street) starting at 11 a.m.
“This is a significant event not only for the Brotherhood of St. Nikola Tavelić Bun, which has been successfully working on the protection and promotion of the ‘Herzegovina Fritter’ for many years, but also for the entire region. Thus, this favorite specialty has the potential to become one of the brands of Bosnia and Herzegovina,” said the aforementioned brotherhood.
The Herzegovinan fritter has cultural and historical value as part of the gastronomic heritage. It has been prepared for generations, the recipe and method of preparation have not changed significantly, and the product is made exclusively from basic raw materials without industrial additives.
The dough is prepared by hand, from basic ingredients, without the use of additives or leavening agents. After mixing to an elastic consistency, the dough is shaped by hand or with a spoon and fried in hot oil until it reaches a golden yellow color and a characteristic crispy crust.
Organized by the Brotherhood, on Thursday, July 16, the 1st Herc fritter fest will be held on Buna.
